On the weekends we like to make a special breakfast, this brunch is ideal.
Whenever I have a special mixmade pancakes in a jar, just I need to add the liquids and any ingredient at the time to make it more nutritious, such as corn meal, oat bran, pureed orchopped fruit. For me, the ideal is to make no fruit because I like to serve with eggs, meats, cheeses and jams or sauteed fruit.
Make your breakfast a special time, this recipe is great because it is very simple and will take little time to do it.
Cornmeal Pancakes with:
- Scrambled eggs
- Cream cheese
- Fresh figs
- Blueberry Jam
- Spanish Tortilla Toast
- Apple and pear smoothie
MIX RECIPE PANCAKES TO STORE
- 6 cups flour
- 12 tablespoons sugar
- 4 tablespoons baking powder
- 3 tablespoons salt you
Mix all ingredients in a bowl and sift well, stored in a large glass jar.
CORNMEAL PANCAKES WITH:
- 1 1/4 cup pancake mix
- 2 tablespoons cornstarch
- 1 egg
- 1 1/4 cup milk
- 3 tablespoons melted butter or oil
Mix all ingredients, heat a heavy-bottomed pan. Greasewith butter or oil and go making pancakes standing with a small ladle the mixture, leaving an inch gapbetween them.
Turn pancakes when we see on the surface begin to getsome bubbles, turn around for a minute more and retire in a bowl, covered with a cloth to keep from losingheat. Repeat until finished with the mixture.
Optional: Cornmeal, oats, bran, seeds, diced fruit, whatever you like.
I like to accompany the pancakes with scrambled eggs made with a little cream cheese, salt and pepper.
