I’m writing notes for the magazine “Tu barrio” (your Neighborhood), bimonthly edition, I will start to share them here because I find it interesting that it gets the notes for different media so you do not lose them.
The idea of this section is that it is seasonal recipes which take two ways, season by seasonal products at times I like to share in a particular season of year.
In this case take the idea to make flat breads to complement a barbecue to share with family and friends. For you who read me from the U.S. or Europe and you’re starting your holiday, and the afternoons are warm or for you that you are in Argentina and South America, and we surprised some beautiful warm days.
When I think of sunny days and seasonal cuisine I can not help remembering the afternoons free, holidays, the moments shared with family and friends, where the warm weather comes, let us take time together cooking and grilling. If a barbecue is a custom Argentina for excellence, can be with meat, vegetarian or as you like… who does not like on warm days together with friends to enjoy a barbecue. Now what interests me is to teach them a grilled flat bread delicious accompanied by chimichurri and spicy sauce.
While the bread doubles in volume, 10 minutes before serving meats or vegetables. The dough is stretched into thin slices and place them on the grill and sauces that accompany, it make you look out of the traditional.
300 g flour 000
200 grams of wheat flour
25 grams of fresh yeast or 1 tsp os dry yeast
300 g water
1 tbsp of salt
50 g of olive oil
Place in a bowl the flour and salt, mix. Make a hollow in the center and there place the crumbled yeast water and olive oil.
Incorporating the flour from the center outside to form a bun. Knead until dough is smooth. If necessary use additional flour to the counter. Place in the bowl again. Cover and let double in volume.
Once the dough leavened, degas, remove air that is crushing the dough with palms. Cut medium pieces, flatten and stretch of elongated shape with the help of a rolling pin. Taking grill to cook for a couple minutes, turn and brush flies with chimichurri or just brush with olive oil and accompanied with chimichurri and spicy sauce
Chimichurris there are many, say that each person has their own recipe. This is what I do in my house.
Oregano ½ cup
Ground pepper 1/3 cup
Paprika 1/3 cup
5 cloves garlic, minced
½ cup white vinegar
½ cup neutral oil
SalT to teast
Place in a bowl all ingredients in a small saucepan heat the vinegar with oil, once hot pour it over the spice mixture, let stand and serve.
Store in a sterilized jar in the refrigerator.
1 green pepper
1 red pepper
1 yellow pepper
2 cloves of garlic
1 jalapeno chili
Lemon peel ¼
Chop all ingredients, bring to a pan with olive oil and cook until the vegetables are cooked, season with salt and pepper. Place a few lemon peels. Add to jar in the refrigerator. Serve accompanied by bread, grilled vegetables or meats.
Tips to remember when we make a barbecue or Asado
– Meats: ribs, beef and pork, sausage barbecue, chicken.
– Salads: classical, lettuce, tomato and onion. Alternative, Arugula, pear, blue cheese and red onion. Steamed potatoes, black and green olives, egg, mayonnaise and cream cheese. My favorite, cucumber, mint, leeks and yogurt.
– Sidedish: eggplant caviar(dip), roasted Peppers with garlic and olive oil, grilled Zucchinis, pumpkins, sweet potatoes and grilled potatoes. Grilled peaches or apricots with a touch of balsamic reduction.
– Good bread or this tasty flat bread version.
– Red wine, natural flavored water. Sparkling water with and without gas.
